- 2 large boneless chicken breasts
- 1 egg
- 2 tbsps. water
- 1 cup panko breadcrumbs
- Â½ cup flour
- Â½ cup parmesan cheese
- 1 tsp dried Italian herbs
- 4 tbsps. tomato sauce
- 8 slices of fresh mozzarella
- olive oil for frying
- Prepare your dredging station: mix flour with Italian herbs and a pinch of salt. Mix breadcrumbs with cheese and beat one egg with 2 tbsps. of cold water.
- Cut each chicken breast in half lengthwise, pound to an even thickness, season with salt and pepper.
- Dip the chicken into the flour, shaking off any excess, then in egg and finally in panko. Brown chicken in preheated olive oil over high heat for 1-2 minutes on each side, top with two slices of mozzarella.
- Bake at 190 C (375 F) for 10-12 minutes or until cheese is melted and chicken is done.
- Serve with tomato sauce and fresh greens of choice.
